Himalayan sea salt is a very rick tasting salt. We use 1 pound of salt to each 100 pounds of meat! That is 1% salt per pound.
The fat content is 8%-15%, very low fat for sausage products which normally have 40-60% fat. We use a low smoking temperature using hard wood smoke. There is a fibrous casing, remove before eating. Good eating with cheese and crackers, and makes a nice sausage pattie for breakfast. Try some cut up in small pieces, cook them with onions, then scramble eggs into the mix. What a great breakfast!
