The salt is HIMALAYAN PINK SEA SALT, a mineral rich, fluid balancing, hand harvested, sea salt. Himalayan salt is a very rich tasting salt. We use 1 pound of salt for every 100 pounds of meat. That means our meats have 1% salt and even lower in sodium!
We use certified organic spices. The fat content is 8%-15%, most sausages have 40-60% fat to extend the meat.
We use a low smoking temperature using hard wood smoke which adds to the quality and flavor. We use a fibrous casing, please remove it before eating. There are NO ADDED NITRATES or MSG, NO CORN SYRUP, NO LIQUID SMOKE, NO FILLERS, NO ANIMAL BY-PRODUCTS, NO PORK IN OR AROUND ANY OF OUR PRODUCTS.

Our beef summer sausage is great with cheese and crackers. Try lightly frying some. While it is hot place on a slice of pepper-jack cheese on it then place it on a cracker. Everyone will want to come to your house for a party! Summer sausage is very good sliced and fried up for breakfast. Try cutting some up into small pieces and frying them with onions then scramble some eggs into them, oh, what a delicious breakfast!!.
